Cabernet.  Why are so many looking for something other than Cabernet when tasting Cabernet.  “I prefer my wine to be like Pinot.” Then, go enjoy a Pinot tasting.  People need to understand that varietals are their own stories and presences in the bottle.  Expecting a Cabernet to taste like a Pinot, or Merlot, or Zin, is illogical.  Take each wine as it is, as it presents itself to you.  Now, I’ve done this before, several times actually.  And I’m nearly always cited for it.  So, I’m speaking from my doings, mind you.  Now I sip each one as its own voice and entity, expecting nothing.  Demanding nothing, especially from Cabernet.
