Taste. Each wine. Over and over and over. Don’t be so rushed to a denouement. There doesn’t need to be a ruling. There doesn’t even need to be an ‘I like it’ or ‘I don’t like it’. Why not just thrill in the instant, in the interaction with the person pouring for you. And remember, taste. What is the wine saying about itself, and then to you. What is the wine’s intention, if any? How do you see the wine, the moment you’re in tasting it. Don’t judge after the first sip, or even the last. Don’t judge at all. Just sip, live.
