There is no such thing as “vareital correctness”.  And if there is, who’s the decider on how Cabernet is supposed to be made, supposed to taste?  Chardonnay?  Zin?  How do you know when it’s “correct?” Who’s the person who has this elevated knowledge?  Who’s mandates and laments the CORRECTNESS of wine?

That’s right… yeah…  that person or aggregation doesn’t exist.

Varietals are supposed to take different forms.  Winemakers are supposed to be innovative with their translation of varietals.  And, more crucially, all our tastes are different.  So even if one supreme judge were to award “correctness”, it means nada if the consumer doesn’t agree.

We as consumers decide what’s correct.  For us.
